Socioeconomic determinants of expenditure on fruits, vegetables and tubers in rural households of Coahuila, Mexico

The objective of this research is to identify the main fruits, vegetables, and tubers (FVT) consumed by rural households in Coahuila, as well as to analyze the socioeconomic factors that influence the expenditure allocated to these foods. The methodology combined descriptive analysis and Tobit models applied to the microdata of the National Survey of Household Income and Expenditure (ENIGH) 2024. The results showed that households categorize fruits as basic goods and tubers as inferior goods. Furthermore, it was identified that FVT spending is determined by income, family composition, characteristics of the head of household and agricultural support. This study provides empirical evidence on rural food choices from a regional perspective.
